Real Passion Fruit Pornstar Martini

Before you start

Ingredients

Cocktail

  • 50 ml vanilla vodka
  • 25 ml passion fruit liqueur, such as Passoã
  • 25 ml fresh passion fruit pulp or purée, from about 1–2 ripe passion fruits
  • 15 ml fresh lime juice
  • 10–15 ml vanilla syrup, to taste
  • 1 small pinch salt, optional
  • Ice

Bubbly sidecar

  • 60–90 ml chilled Prosecco, Champagne, or dry sparkling wine

Garnish

  • 1/2 fresh passion fruit, floated on top

Recipe notes

Notes

  • Use ripe, wrinkly passion fruits if possible; they are usually sweeter and more aromatic.
  • The pinch of salt is optional, but it sharpens the passion fruit and balances the vanilla.

Method

Step 1 of 6

  1. Scoop the pulp from the passion fruits. For a cleaner drink, strain out most of the seeds; keep a few if you want texture.

Step 2 of 6

  1. Add the vanilla vodka, passion fruit liqueur, passion fruit pulp or purée, lime juice, vanilla syrup, and optional pinch of salt to a shaker.

Step 3 of 6

  1. Fill with ice and shake hard for 10–12 seconds, until cold, frothy, and lightly aerated.

Step 4 of 6

  1. Fine strain into a chilled coupe or martini glass.

Step 5 of 6

  1. Float half a fresh passion fruit on top.

Step 6 of 6

  1. Pour the chilled bubbly into a small separate glass and serve it as a sidecar.

Vanilla syrup quick version

  • 2 tbsp sugar
  • 2 tbsp hot water
  • 1/4 tsp vanilla extract

Stir until dissolved, then chill if possible. Use 10–15 ml per drink.
